Job Title: HoD French Bread

Summary: Oversees the preparation and service of all baked goods (European breads, pastries, and country breads) for small and large quantities.

Reports to: Production Inspector Breads & Pies
Duties & Responsibilities:
1. Assist for the preparation and production of all European Breads from ingredient mixing, kneading, dividing, molding, proofing, sheeting, baking, and packaging through machinery processing.
2. Inspects and controls product for quality during and after baking and makes adjustments to processes as required.
3. Ensures good and quality production for large quantities of breads using industrial equipment.
4. Assist in the preparation for a variety of breads.
5. Enforce safety and sanitation regulations.
6. Knowledge in dough making process from kneading to baking.
7. Coordinates with the Division Head on day-to-day production, and updates on product quality and recipes.
8. Monitor scheduling of production batches for all the production lines and bread types.
9. Assist in the preparation of European Breads of all kinds according to established recipes.
10. Ensures that all temperatures of equipment are within the norm; reports to the Maintenance Manager any out-of-order incidents.
11. Verify production schedules to determine the variety and quantity of goods to bake, and to assemble supplies and equipment needed for daily baking activities.
12. Assist in receiving of ingredients and other supplies from the warehouse as required for daily operations.
13. Performs training and guidance to the bakers, and other workers to their assigned work.
14. Assist in training and coaching for newly hire employee under this division to meet job requirements and supervising their performance.
15. Maintains work areas, utensils, and equipments clean.
16. Attends to day-to-day problems and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual conditions.
17. Maintains and completes food production records, reports, and department files as required.
18. Ensure compliance with company’s policies and procedures.
19. Assists the HoD in evaluating all employees under his/her supervision.
20. Should have constant coordination between packaging staffs to avoid late packaging or over freezing of goods.
21. Performs other duties pertinent to this job as assigned
Job Title: HoD Viennoiserie
Summary: Oversees the preparation and service for all baked goods (Croissant, Brioche, Pain aux Raisins, Pain au Chocolat and pain viennois) for large quantities.
Reports to: Production Inspector Breads & Pies

1. Assist for the preparation and production of all Viennoiserie Goods from ingredient mixing, kneading, dividing, molding, proofing, sheeting, baking, and packaging through machinery processing.
